I’m not thinking hunting cottage with dark wood…I’m thinking beach cottage or maybe shabby chic style with white furniture.

Try de-glossing it with Paseo to save yourself some sanding. Then you will only need a fine grit paper and don’t risk leaving scratches that will show through the paint. Paseo will take away the shine of the sealant. I would use a stain blocking primer like Zinsser first and then two coats of latex in the color of your choice.
